The website of the Regulatory Council perfectly summarizes: “The Manzanilla is a dry white wine, made with Palomino grapes and aged under a layer of living yeast known in Spanish as «flor». Its ageing takes place exclusively in wineries of Sanlúcar de Barrameda. The special climatic conditions of this city, located at the mouth of the river Guadalquivir, encourage the development of this very peculiar veil. As a result, wine acquires particular and distinctive characteristics”. The Manzanilla that has known an exceptionally long aging period, with more complexity and structure, is called «Manzanilla pasada«.
